Conveyancing costs - what am I missing??

There is such a huge variation in costs of conveyancing; does anyone have any sound advice as to what we must ensure is covered in the 'quotes' etc. before we proceed? I can't believe some of the differences in price for what I can see offer no differences in services at all? Am I missing something?
We will be looking for conveyancing for both a sale and a purchase and quotes have ranged from £800 to £2500......
