Signed for, as far as I know, offers no guarantees or insurance beyond sticking a second class stamp on it. It may have helped if the buyer is lying about receipt but recorded, as was, is not the service to use.
It's also not good advice to say "always" use it. Paying extra for tracked delivery is not always cost effective. I send hundreds of items a week, tracked items account for less than one percent of parcels sent..0 -

48 hours isn't a long period of time, and you're effectively relying on your buyers goodwill to return your £175 when / if the item shows up.

Well that's your choice to make, but it's a very risky one as post can often be delayed, but still show up. If the item shows up the next day and they buyer decides not to return it or return the refund, you're £175 in the hole.
