LW.......recipe for crumble, please? I think that ours is a bit slow this year, will pick whatever is there tomorrow and freeze what I dont cook....its a great stanby through the winter for puddings.....a sponge mix with some rhubarb stirred in before baking makes a lovely moist cake for use as pudding with custard, cream or ice cream, is also nice cold as a cake.
I use one of those round enamel dishes, and it does the two of us for four desserts (with custard, of course);)
Anyways - for the Strubarb bit - I use about two-thirds rhubarb, cut into one-inch lengths, and one-third strawberries, dotted in evenly amongst the rhubarb, to fill the bottom of the dish. I sprinkle about a tablespoon of sugar over (rhubarb can be a tad sharp, even for my taste), and cover it with the crumble mix.
For this I use:
3 oz butter, melted in the microwave or you can use a basin over a saucepan of hot water
3 oz Demerara sugar
Enough porridge oats to bind the above into a stiff mixture which can be pressed down into place once it's on top of the fruit.
Once that's assembled, bake at 180 C for 45 minutes.
Serve hot or cold - we usually have it cold, with hot custard on; it'll keep in the fridge for a week, if you can keep your paws off it for that long.:D
The crumble mix is my "standard issue" - I use it on all sorts of fruit - we've got "strapple" at the moment - apple and strawberry, which was an experimant, as the Bramleys I got from the market are a little smaller than the last lot.:D I've also done banana crumble (to use up ripe 'nanas) and pineapple crumble, purely as an experiment.:oKnittaPlease wrote: »I am not having the best day, with my anxiety levels sky rocketing... for seemingly no reason. I have escaped to the coffee shop now my delivery has arrived, so thanks for your kind words.
I just bought a massive bundle of rhubarb that had been yellow stickered so will be making crumble for pud tomorrow with your recipe (my 4yo niece is coming for the weekend). The rest will be going in a bottle of vodka with some sugar (once this has infused, it's amazing with cream soda - tastes just like rhubarb and custard sweeties).
Is it me, or is rhubarb getting ridiculously expensive? It seems that years ago you couldn't give the stuff away, and now it's almost mortgage-busting.0 -

Thanks for recipe LW, will try it atthe weekend, have lots of sweet stuff at present and if I make more I will eat it, something I do not need todo, will give myself a dispensation at weekend.
Much colder here today, windy too. The dogs are only allowed out in back and side gardens, which are fenced, they have spotted 2 rabbits across the driveway at the front and are going mad to get out after them. Its as if the rabbits are teasing them, running up and down opposite the living room windows.....as OH is normally the softie who lets them out, they havent even asked me, his refusal has put them into a sulk.
We are having roast beef for dinner, DD4 and DGS2 will be here, will have mash, gravy, parsnips, broccoli with it....prefer to do a roast when there are extra mouths here, hardly seems worth worth it for the 2 of us. Pudding will be whatever is in tins, need to get rid. Have bread proving to go in with roast, feeling very efficient.
Dumpling, sorry that your anxiety levels are up, I try to breathe slowly when I feel anxious, usually helps.
Best turn the oven on or there will be no dinner for anybody, be kind to yourselves

Good evening everyone,
Well what a change in the weather today, its been cold, windy and hasn't stopped raining.
Work was very busy again, when I got home I sat down with a cup of tea and dozed off, then DD appeared and made me go to the gym:D
I now feel much better, when we got back I made a veggie pasta bake for dinner, and I've also made a loaf of bread, and am trying my first batch of yogurt and I've also made my first batch of healthy cereal bars, which are very yummy:)
Just chilling out and relaxing now.
