Hi, I'm new but have been browsing the OS forum for a while and wanted to share some very simple and cheap soup recipes with you all
Tomato and Basil
Big bag of peeled tomatoes (I use tesco value)
Handful of basil (If you buy a plant it will last you months and is a lot cheaper than powdered or pre cut)
1 oxo cube
Heat for two hours wizz in a food processor then serve.
Carrot and Parsnip
carrots
parsnip
100ml water
oxo cube
handful fresh coriander
heat afor one to two hours, whizz up than serve
Leftover soup
Kepp a plastic tub in your freezer and whenever you have any leftover vegetables from cooking put in the tub, when full heat up for 1 to 2 hours and put in a food processer, flavour with a bit of tomato puree and herbs of your choice and you don't need to throw away as much veg. Gunk from the juicer also works well to make a nutrious soup as well. apparently.
Another tip is buy all the near to out of date vegetables on the clearance ailes in your supermarket and freeze until rady to make a soup, if the quality isn't that good than you won't notice if it is made into soup.

Further to skellig's recipes, here's 2 that I use regularly:
Carrot & Coriander
500g bag carrots
1 onion
2 cloves garlic
oil
small bunch coriander
1 - 1.5 pint hot vegetable stock
heat oil in big pan
chop onion, put into pan, put lid on & sweat over low heat until soft
chop carrots roughly into chunks - no need to peel - and add to pan
put lid on & sweat for 10m
add stock
bring to boil, then lower heat to simmer for 20-30m
allow to cool a little, check seasoning then add coriander
liquidise & eat!
Mushroom soup
large box mushrooms - approx 500g
1 onion
2 cloves garlic
oil
1 pint hot vegetable stock
heat oil in big pan

chop mushrooms roughly into chunks - including stalks - and add to pan
put lid on & sweat for 10m
add stock
bring to boil, then lower heat to simmer for 20-30m
allow to cool a little, check seasoning
liquidise & eat!
