Before I start looking, any ideas whose doing deals on Dover-Calais or the long crossing to Northern Spain (Bilbao/Santander)?

Eurostar or Eurotunnel? On the basis the OP is mentioning ferry I am guessing they are wanting to take their vehicle in which case it'd need to be the tunnel and they only do a shuttle run and dont take you any further than Calais0 -

Off the top of my head, you can go to Holland, Belgium, France, Spain and Ireland. Plus obviously UK islands. Main ports are Newcastle, Hull, Harwich, Dover, Portsmouth, Plymouth, Holyhead.
Google ferry uk and you'll find the main companies plus lots of booking agents.0 -

Spain is Plymouth/Portsmouth to Bilbao/Santander. It's quite expensive, especially in the Summer, and takes 18 hours+ (operated by Brittany Ferries).
Brittany Ferries also operate "long" crossings from UK-France: Plymouth-Roscoff, Portsmouth-Caen/Cherbourg, etc.
From Dover there are P&O (to Calais), DFDS (to Calais/Dunkerque) and MyFerryLink (to Calais).
There is a complete list here:-
