I make batches of soup usually from a chicken carcass & freeze it in batches to take to work for lunch, I also take leftovers from the evening before.

If you cook extra pasta, rice or potatoes with your evening meal, you can make nice salads for the next day.

I take leftovers - shep pie, tuna pasta, chilli, soup etc. Today's is risotto - not sure whether to eat it hot or cold though ;)

But I also bake a whole batch of baked potatoes and freeze them (have about 8 in my freezer at the mo). Then just take one out at night and put in fridge to defrost - at lunch zap for 2 mins and add baked beans or tuna etc ;)
