Can anyone recommend some relatively easy potato dishes I can freeze please.
I have just over 7kg of white potatoes that are about to go off, and I am doing some major cooking in readiness for my baby arriving, so I can just defrost and pop in the oven to cater for us in the next few weeks.
So if anyone can suggest anything reasonably simple that could be made and popped in the freeze I would be very grateful.

mash freezes well - freeze either in portion sizes or ice cubes for flexilbility.
I have thought of freezing wedges / chips, blanched and ready for the oven, BUT I haven't tried it yet ....
potato gratin freezes well

Potato, onion and bacon hotpot (in the recipe index, sorry I can't do links:o ) freezes really well. Very tasty, you'd only need to do a colourful veg or two for a meal:DYou never get a second chance to make a first impression.0

what about fishcakes? mash mixed with tinned salmon or tuna then made into patties. either crumbed or plain both are delicious. freeze them uncooked then just bung in the oven.

Just remembered, if you're a fan of roast potatoes, these freeze brilliantly. Pink-winged put me onto this. Just prepare and cook as usual, but remove from the oven when they're slightly underdone (say 15 mins early?) Pop into a hot oven when you want them and they crisp up beautifully. I'm guessing you won't want to be bothered with roast dinners when you have a very new baby, but just roasties with a chop or chicken breast, make it *feel* like a roast dinner.:DYou never get a second chance to make a first impression.0

When I make mash I usually try and do loads and freeze some as DD1 loves it and it's really handy to have portions in the freezer.
Particular favourite is cheese and onion mash - once I've done the mash, I add a good portion (to taste) of grated cheese and some finely chopped onion (I generally use red onion or spring onions - whatever needs using up). I usually stick the onion in raw, but you could cook first if you prefer it that way. I try to avoid adding too much fat to foods, so just keep it simple !
Could also do similar but with cooked shredded cabbage, and shape it into individual 'cakes' like ready made bubble and squeak ?0 -
Cheese and potato pie freezes well. Mash pots with milk and butter and grated cheese. Top with cheese and sliced tomato and grill to brown! Lovely served with baked beans!0

Yes, freeze after you have grilled with cheese and tomato on top and allowed to cool. You can take out of freezer in the morning and heat in microwave when you get home from work!0
