Your favourite pie recipes, please share

Options
I need to make some pies that can be enjoyed hot or cold. Probably pasty type.
I make a mean steak, guinness and kidney - but would love some inspiration for some new recipes.

Would anyone like to share some favorites?

    Can the suggestions be backed up with the recipes.

    I'm sure there are plenty of people who would like to give them a go.

    Lentil and tomato pie:

    Fry 4 oz chopped leeks in butter gently for 10 mins until softened. Stir in 6 oz red lentils and coat in the butter. Add 18 flo oz vegetable stock, bring to boil and simmer for around 20 mins or until the lentils are cooked and there is no extra liquid. If there is, turn up the heat and bubble it away. Remove from heat. Add 2 skinned and chopped tomatoes, 1 beaten egg, 2 tbsp lemon juice, pepper and dried or preferably fresh basil. Set aside.

    Make pastry with 8 oz plain flour, 4 oz butter, 2 oz grated cheddar cheese and half a beaten egg. Line a pie/flan dish with half of it, fill with the lentil mixture and top with the other half of the pastry. Brush with the other half of the beaten egg. Bake in the oven for 40 mins at 180C (fan oven) or 200C (normal).

    This is truly fabulous - I've never fed it to anyone who hasn't asked for the recipe. My brother-in-law (anti-veggie!) LOVED it.

    OH takes it to work cold for lunch too.

    Summer crab pie (also works well as mini pies)

    2 tins of crab (or fresh or tuna etc etc)
    2 eggs
    4 oz cheese
    tablespoon flour
    200ml cream/creme fraiche
    a pack of filo pastry


    butter each layer of filo pastry and layer in a pie tin or individual tins
    mix all the the other ingredients together and dollop onto the pastry, fold the edges of the pastry over the filling

    bake for 25 mins at 200 degrees

    It's very light and yummy, great cold for picnics as well as hot. I sometimes add sweetcorn or pesto.
