Been asked if I have a Buy it now price

Hi, I have an item for sale on ebay, auction only. I have received a message asking if I have a Buy it now price.
I am thinking of saying that I'll take (e.g.) £50. If the potential buyer says OK, how do I sell it at £50?
Do I cancel the auction and relist with a BIN of £50 and send a message to the buyer informing him of this and agree a time so that he can buy it straight away?
Could I do this outside of ebay to avoid fees (if the buyer suggest it)? Or is this a big no no?

Sorry I have just seen that I can add a BIN price if I revise the listing!
