I couldn't help myself! They were reduced something stupid at Mr T and so I bought 3 tins... *sigh* problem is I haven't the foggiest idea about what to do with them... I sometimes use red lentils to bulk out beef in lasagna, but I think from memory these are green ones...

I once made a lovely stew with green lentils. The recipe is long gone, but it involved root vegetables mainly carrot and swede and I think leeks. You cooked them in vegetable stock added the green lentils and some marmite which gave a nice kind of beefy taste. There were probably some herbs involved, but I wouldn't have a clue what. You could tinker around for your own preference I guess.:DI have plenty of willpower - it's won't power I need.

I've made a copy of an M&S lentil salad. Cook some little pasta (as small as you can find) and mix with some finely chopped celery, add the green lentils and some oregano. Dress with a slightly lemony olive oil dressing. Yummy.0

I used a tin last night to bulk out a mince n tatties type thing.
Green lentils work just as well as red for bulking stuff out.0 -
fry off some red onion, throw in some canned tomatoes, add some chilli and coriander for spices, heat through the lentils. Serve with a dash of lemon juice.

I'm happy enough with veggie meals but OH refuses to have a meal with no meat... thankfully he works away 2 night s a week so I just have those as veggie nites

I know this sounds wierd, but it's really nice. Spinach and lentil sandwiches!! For each sandwhich use 50g (2oz) defrosted frozen spinach, 1 tbsp cream cheese, 1/2 tbsp tinned lentils and 1/2 tbsp grated parmesan. Just chuck it all in a blender and use! Keeps 2 days in the fridge. Or try lentil croquettes - these are delish and freeze really well. Put 175g (6oz) tinned lentils in a bowl with an egg yolk, 2 tbsp softened butter, a crushed garlic clove and 1tsp ground cumin. Mix and season. Squish into sausage shapes, mashing it with your hands and getting right in there! Rest in the fridge for 30 mins, then dip into flour, egg and breadcrumbs and fry in a frying pan turning occaisonally until they are nicely brown and golden.0
