Ideas to use a HUGE cabbage

Cabbage Galette is lovely and easy. If you do an internet search you'll see lots of recipes and images as it is kind of hard to describe. It's like a pie but without a crust!0

OK, this is a weird one but it does work - on a month long expedition in Tanzania with 23 teenage boys who hated veg, I got so desperate for fresh veg that I acquired a cabbage. The only way I could get the kids to eat it was to "pizza" it.
Chop it up into little bits, fry a chopped onion, add the cabbage and wilt in a pan that has a lid. Stir in tomato puree ,fresh tomatoes, a good fling of mixed herbs, a little suga, salt and pepper and let it cook down for about 10 minutes stirring. Top with grated cheese and allow to melt for about 5 minutes. It looks terrible, but tastes great!0 -
I made Madhur Jaffrey's stir fried cabbage with fennel seeds a while ago when cabbages were cheap in Aldi. It was a really nice stir fry with Indian spices. My daughter was not so keen on it, so I have not made it again but I really liked it. I'm sure it would show up on a google search.0

How about soup? I make it with a couple on onions, couple of ribs of celery, a couple of leeks, a few cloves of garlic. Sweat for 10-15 mins using spray oil and a round of parchment paper on top.
When everything has softened, add a couple of chopped potatoes and the cabbage (coarsely chopped). You can add chopped broccoli stalks and leaves at this point if you have any and be sure to include the tough outer cabbage leaves.
Add garlic granules, onion powder and pepper, then cover with hm chicken stock or use stockpots and boiling water.
Simmer for 30 minutes then cool, portion and freeze. It will last for months in the freezer.
I add a handful of grated cheddar, grilled smoked rashers and/or chopped walnuts before serving to really round it out.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.

This week's veg box arrived before I left for work this morning, and guess what's in it?
Guess I'll be trying lots of these suggestions over the next week or so!Back after a very long break!0 -
Oh dear! And next week? They are in season you know!!
Have fun with the recipes! That is one reason why I don't get a veg box. There is only so much you can do with a glut of a particular veg that you perhaps aren't keen on. If you grow it on the allotment you don't mind giving it away, but if you have paid out considerable money for it then it's a different story.Father Ted: Now concentrate this time, Dougal. These
(he points to some plastic cows on the table) are very small; those (pointing at some cows out of the window) are far away...:D:D

how about sauerkraut?

Shredding for coleslaw and sauerkraut is easier with one of these:

Agreed with both points here.
I've recently fell in love with http://www.chow.com/recipes/18630-reuben-sandwich. I cannot recommend them enough.0 -
don't have to muck about rolling cabbage. Blanch the leaves whole, place one in bottom of large dish.Layer more leaves with mince, onion and whatever. Place last leaf on top like a cap. Pour over condensed soup of some sort. Bake until done ( always hate this instruction in recipes but I don't know how long. 45mins?)0
