    Out of curiosity did you have all the ingredients in to make it or did you omit or use substitutions? It sounds really nice btw.

    I had parmesan, cheddar and eggs. I replaced mozzarella with grated mozzarella (as that was what was in the fridge). I replaced the spring onions with shallots and the only thing I had to buy was some soured cream which the local shop didn't sell so I used double cream. I ignored the part of the recipe where it said to top with chives or onion tops.

    I also didn't have the right size dish so I put the bread in two layers and that seemed to work.

    Thought it was lovely but an expensive way to use up left over bread (if I had to go and buy everything)

    Maybe, but the bread didn't stretch to having two layers across the entire dish so some only had one layer and that was still stodgy. I will make it again but have baked beans or a salad with it.

    Bread can be revived the next day. Just brush with some water and place in a pre-heated oven for a few minutes. Once you've figured out the time and temperature for your oven, it comes out surprisingly good. I really don't like stale bread, and it does not taste at all old or stale.

    You can also stick it in the freezer if you have one and make breadcrumbs another day.

    It's because they do four loaves for £1 at Tesco's and as there's only me and my husband it's hard going to eat them all! But it costs 45p a loaf and so four for a £1 is a bargain

    Aaaahh but it's only a bargain if you don't throw any away....could you freeze 2 as soon as you get home from shopping and use at a later date?

    I haven't been throwing them away - we usually use them over the weekend having them for breakfast, lunch and tea! Then any left I make breadcrumbs. The freezer is so full I can't get anything else in. That's a whole other thread though ...

    Cheesey bread and butter pudding is delicious with a tomato salad (sliced tomatoes, sprinkle with salt, pepper, dried basil or oregano and just a pinch of sugar {less than the amount of salt you use} if the tomatoes aren't freshly picked out of the garden) and some watercress or rocket.
