    Oooh its gorgeous, where I am we had a Pieminister but it closed down and so now I can't get it as our supermarket only sells the meat ones :(, but if there's a recipe to create it I'd love to try! :j

    I have the Pieminster book and it doesn't have recipes for the pies they sell. I'd just wing it with a shortcrust pastry case and the veggies you've listed.

    I've perfected this after eating one 3 years ago and trying until I got it to taste right.

    1 medium sweet potato, peeled & cubed (small cubes)
    1 bag spinach
    1 bulb of garlic - brushed with olive oil, wrapped in foil and roasted in the oven for about 20 mins
    One round of goats cheese
    1 red onion
    Pastry

    Put garlic in a med oven to roast, boil sweet potato until just cooked and fry red onion until soft.

    Put sweet potato in bottom of pie case, followed by red onion, goats cheese crumbled and then squeeze the roasted garlic out and dot around evenly. Add as much spinach as you can (remember it will shrink massively when cooked)

    Pop your pie lid on, poke the top with a fork and cook around 180 for half an hour/40 mins until the top is golden brown.

    Voila!

    Oh, and it's National pie week this week so fill your boots.
