Help connecting everything together

I need some advice on how to connect all my audio video equipment together and what cables connect where etc for best picture and sound.
First of all here is a list of what Ive got

Toshiba ET1 Projector (with 1 scart, RGB, S-Video)
Panansonic SC-HT520 Home Theatre Sound System (incl dvd with 1 scart, RGB, S-Video)
Sky+ box (2 scarts *1 TV out 1 VCR out * S-Video)
Video (1 Scart)
TV (1 Scart) (& a yellow red & white connector??)

Now the questions

I need to have my projector on the ceiling and I can feed any wires through the ceiling the approx length to dvd, tv etc is 30ft
I want to be able to watch TV but also be able to switch to the Projector for either DVD playback or just general SKY viewing, both of these I would like to be connected to the surround sound system.

I would prefer the better DVD pictures to the Projector but I also watch a lot of sports and would also like a good SKY signal to the projector also.

I have heard about a scart switcher and heard good reports about the QUINTRO+ . Would this do everything I need and if so what cables do I need from each device?? and which connect to what?

I'd really appreciate any help in this as Im completely baffled with all these different cables etc
