I just bought a breadmaker and trying to find some nice recipes. The ones that come with my machine all use sugar, and the wholewheat loaf uses 3 table spoons! I tried it and the bread is so sweet (nice but it isn't proper bread!)
It says its to feed the yeast, I tried some without and it didn't rise as good but was ok.
The crusts have been coming out too hard as well, I always put the lightest setting but maybe there is something I can add to soften it up?
Anyone got any tips?

Three tablespoons? Are you sure you read that correctly?
Mine specifies one teaspoon, but I only put in half that and it rises okay.0 -

Yeh it says tbsp, and its in all the recipes so I dont think its a typo. I thought it sounded like a lotFaith, hope, charity, these three; but the greatest of these is charity.0 -
I would certainly double-check the recipe!
In fact, I have just checked my booklet - the standard loaf I bake is a whole-wheat/white 50-50 mix and has 1 teaspoon of sugar...a white loaf has 1 tablespoon and the only recipe I can find that asks for 3 tablespoons is the enriched sweet fruit loaf!
You might like to look at adding citric acid to your mix (you can buy this at a chemist)...just a teensy tiny pinch...it helps as a yeast 'improver' by altering the acidity of the mix.0 -
Mine also say 3tbsp! Don't come out particularly sweet, but then I always make white/brown/spelt loaf with seeds0

Yes, just use the breadmaker for kneeding and the first prove for a normal bread recipe then cook it in the oven!

Is your machine/booklet American? I find all their bread recipes very sweet (and indeed when ever I'm in the USA they tend to serve you a very sweet bread before you eat in many restaurants - I find it almost sickly!)
I use the same amount of sugar as I do yeast (usually 1 tsp of each for most recipes) and have no problems.0 -
i have a bread maker but never use it now as the paddle at the bottom stuck in the bread and left a hole. i put all ingredients in a bowl and use my hand mixer with dough hooks attached. i only ever put in a teaspoon of sugar0

3 tbsp of sugar for 1 loaf is rediculous. Get a Panny, most recipies use 1 teaspoon per loaf.0

I use this recipe and have not had a problem using it in all different bread makers I have owned.
9 floz water
8oz wholemeal bread flour
8oz white bread flour
2 level tsp sugar
1 and half level tsp salt
1 tsp of yeast
1 oz of marg
add to pan in order listed keeping sugar salt yeast marg in separate corners
bake on wholemeal cycle makes a 1.5lb loafSealed pot challenge member 4370 -
My Panasonic basic white loaf uses 500g bread flour, 1 tbsp sugar, 2 tbsp milk powder, 1.5 tsp salt and 25g butter and 350ml water.
