Parking Notice received this morning!

Hi All,
Have been reading through old posts and pinned threads and just wanted to confirm a few things.
Firstly the background is that on Mother's Day (15th March) I took my mum to a local retail park and we had a leisurely stroll around, including lots of stops at the coffee shops and food retailers for coffees, lunch and cake!
This morning I have received via post a parking notice from parking eye, stating I stayed 3 hours and 45 minutes (max stay 3 hours). I have never seen any signs, and am a frequent patron of this retail park, but I do know that ignorance is not mitigation!
I know this particular retail park have a problem with people parking there and then walking up the road into the town centre. However, I do have several receipts from purchases made on the day, and I'm sure that their own CCTV could prove that I did not leave the retail park.
I noticed in one of the pinned threads it mentioned the initial notice letter should be received within 14 days - is this 14 working days? I have just received it in the post today, which is day 15. Which date is relevant here, they day they sent it or the day I receieved it?
If I have infact received it a day late, should I still contact the retail park, or simply refute the notice as it was late?
I'm absolutely rubbish at dealing with things like this; they fill me with complete dread. However, I have no intention of paying this ticket when I was a genuine patron of the retail park! So any advice that you can offer would be much appreciated!
Thank you in advance,
Ruth

See the NEWBIES sticky thread. Delete the "rant" paragraph from the template appeal if you wish (immediately below point e), and add an appeal point:
x) The vehicle occupants were making extensive use of the retail facilities at the site, as evidenced by the attached copies of receipts. Therefore there was no loss to yourself or the landowner - in fact there was increased revenue generated for your principal by the alleged overstay.
(I assume you do have receipts?)
In spite of their odious reputation, PE are generally fair in cancelling PCNs when presented with such evidence.0 -

Yes thank goodness I have some receipts. They don't cover the full period of my stay, but we must have spent a good 90 minutes to chatting away over coffees and cake - and I didn't keep those receipts. Should I contact the PPC directly or go to the retail park?
I should note also, it was an ANPC Camera Incident, hence my question about the 14 days. The letter I received today does seem to be a NTK.0 -
day 15 was the deadline
just send the template letter with the additional point above added
attach COPIES of the receipts (or photos)
do not admit who was driving
dont overthink this, just do it as instructed0
