PCN - Received Charge Notice - Advice needed

Hi,
at the weekend we received a PCN for £90 for parking at a Lidl Car park. The notice is from Athena ANPR ltd and they have my wife details from the DVLA as well as pictures of our car arriving and leaving the car park.
We have since discovered that Free Parking is only 10 minutes if you do not validate your parking at the till by providing your registration number. We was parked for 40 minutes while we completed our shopping.
We didn't see any notices regarding the process and we wasn't asked for our car registration details at the checkout. We no longer have the receipt but we can provide a bank statement with the Lidl transaction.
We are going to appeal so should I simply provide bank statements as evidence that a transaction took at Lidls and complain to the store.
Or should we follow the PCN process as provided in the templates etc.

do both
use the template to atena
complain bitterly to lidl with copies of the redacted bank statement (no personal info but transactions showing, especially for the day in question)
no admitting who was driving either0
