When we witnessed the signature on a neighbours will it was undated, when he passed away i had to visit the probate office and give them details of when we signed it and sign a document with the details i had given.

No. The legal requiremnts are that a will must be:
- In Writing
- Signed by the testator
- signed by two witnesses in the presence of the testator and of each other

The issue would be if there was uncertainty about whether the will was signed before, or after, any other will being produced, or before or after an event such s marriage which would automatically revoke the will.
