2 night stay 4* hotel Bournemouth 22&23 March

I have a booking for a 4* hotel in Bournemouth from Sunday 22 March for 2 nights which includes 3 course meal with wine and breakfast. It was bought for my parents but they have the norovirus. Its all paid for but the hotel Won't exchange or extend the date.
