can anyone help this pasta/rice loving family to reduce carb intake please

    Seriously, it would be a disgusting combination with my sauce. I can't actually think of a single pasta sauce which would taste nice served on a bed of shredded courgette, no matter how it was cooked - perhaps you could give me a recipe?

    Obvously you have to educate your palate, amongst other things. I cant think of any that wouldn't work. And if you are using the courgette as noodles you wouldn't be frying them in butter or anything else. Do you fry your pasta?

    Udon doesn't contain any more protein that ordinary noodles and Soba contains more as it is made with buckwheat.

    I don't have noodles at all I have extra beansprouts :-)

    Lots of vegetables, brown rice (i usually buy bags of Tilda wholegrain basmati) and white meat, so chicken or turkey and that will provide a meal that's full of good nutrition and will fill you up.

    I really like Bisto's chicken gravy range and I make that almost every night (nice and thick) and pour that over my veg, rice and meat. I am not a huge fan of vegetables, so adding the flavour of the chicken gravy really adds that something to the meal, so you could also try that if you're or your family aren't veg fans. Also, i usually steam my vegetables or buy frozen, but that is your choice.

    One more thing, wholemeal pasta is fine. You could always make pasta, tuna, mayonnaise (low fat), sweetcorn and add a little virgin olive oil, in a large quantity. I would stay away from white/simple carbs such as white bread, white pasta, white rice etc as there's not much nutrition in simple carbs like those.

    Read my subsequent post - the one where I said I was joking about frying the courgette.

    I don't need to "educate my palate" as I love my food and have eaten most things - from abalone to zebra. I am very open to trying new things but I'm not going to ruin a perfectly good meal by pairing it with a food item which my palate knows will not complement it.

    Thank you for implying that it is not only my palate which requires educating. I didn't realise that it was necessary to provide proof of my A levels or degree before posting my opinion :T

    Right I'm going to give this cauliflower rice a try tomorrow. I've read various recipes and they seem to say that you can either saute it in a bit of oil or you can microwave it - any suggestions for which is the best? I was thinking of trying this recipe and serving it with a saag aloo and a goan lamb curry.

    That's you and everyone is different. Some people put weight on more easily than others. Lots of people get very bloated on wheat.
    OP have you considered eating more sweet potatoes and basing your meals around primarily lean meat, fish and vegetables?

    If you want just a plain rice, wash your cauli and blitz it a few florets at a time in a blender until you get rice sized grains. Fill a pint sized bowl or basin for enough for 2 people, you don't need to add any water to the bowl. Microwave for 6 mins on full (850w oven) and serve with a dollop of butter on top. We eat this about 4 times a week and use it to replace rice, pasta and mashed potato.

    Carbs may not be your enemy, I know they are mine. Cutting out bread, pasta, rice, spuds over the past year has been the only way me and my OH have successfully lost and kept weight off.

    We allow ourselves carbs as a treat, but will never go back to eating them in any significant amounts again.
