Catering range cooker in the home...

Me and the wife both love cooking but HATE the standard ovens you can buy due to the burners who needs a wok burner???? What are the restrictions of fitting a catering version? like this http://www.lincat.co.uk/products/type/category/dual-fuel/od7007-n
At my wife's work (youth center) they have a catering range fitted yes it has wheels and it is much bigger but the gas connections are the same as it the flow rate on the meter, my new kitchen will be a custom design so I will fit it in perfect I also understand I will need a better extractor, how ever this will be part of the look.

The cost is about the same as good domestic version so is there any down sides?

I have been told about insulation but there are no young children in my house.

    On the odd occasion when I've used the catering stoves, the biggest problem that I've had is the lack of small rings for little saucepans.

    My gas hob does have one of the huge wok burners, and it is only really usable for woks. If I stick my biggest frying pan on, it melts the handle and burns the handles of any wooden spoons.

    On the other hand, it the hob does have a dinky little burner which is just right for small saucepans. Trying to heat up one tin of beans on a catering size cooker is tricky, because I just can't turn it low enough without the flame going out.
    If it sticks, force it.
    If it breaks, well it wasn't working right anyway.

    I suggest you contact the manufacturers of the commercial range cooker to see if there are any special ventilation requirements. On full whack that thing will consume some air.......air you might need to breathe, and if it can't get enough air incomplete combustion will create carbon monoxide like its going out of fashion. It is after all a flueless appliance.

    Every year cookers kill people. Just do the research and make sure your installation is a safe one before you start taking risks.

    Alarm bells are going off in my mind with the flueing requirement, the ventilation requirement, the fact that the hob itself has a 32kw output (!!!!) and the requirement for very good extraction, should talk for itself.


    I would be amazed if , if you were to buy one like that, that the manufacturer would even cover you for it.


    There are lots of very good range manufacturers out there, who make fantastic products, almost catering style. I have looked at Britannia cookers in the past and the build quality was amazing. the hotplate/griddle weighed an absolute tonne !

  • Possibly the £2500 price tag ???? and I wouldn't say that's the same as a good domestic one...... you can get those MUCH cheaper....

    I would agree with the comments on Ventilation also.... Commercial extraction hoods and fans have significantly more "suck" than your average kitchen hood.....

    Other than that, nothing I'd say to stop you fitting one....

    Might be worth looking again at domestic kit. You get what you pay for.

    We had our kitchen refitted last year, nice 5 burner gas hob - Hotpoint Luce one* - the big burner in the middle is fine under the wok for stir fries, right down to the small frying pan for a couple of eggs, so none of the problems that Ecto referred to below.

    The extractor fan has enough suck on settings 3 and 4 to pull air through from the living room - we know that because we get that old soot smell as air is sucked down the chimney !

    *well the missus is happy with it and she's used to commercial catering kit from her job.

    The lincat model I showed was just an example I would not be going with a 32kw model!

    As for fitting ventilation I am going down the industrial extractor route anyway.
  • FYI.... you'll also find that Commercial Ranges are not all that fancy... they are exactly that..... Commercial... Rough and robust... The reason for the high price tag is they are usually all fully Stainless Steel.....

    There was an industrial size extractor in our house when I moved in. Bear in mind that in order to blow air out, air needs to be able to get in.

    Ours would pull smoke back down the chimneys. You might not have that problem, but you will need to let (probably freezing cold at this time of year) air in somewhere.
