How about coating the chicken peices in a large teaspoon of pesto & serving over roasted veg & spuds, maybe with some cripsy bacon on top?

    HTH;)

Personally I'd cook pasta and say 'you're lucky someone else is cooking for you' ;)

:rotfl: lol, yes true. But she is right I always default to cooking pasta for her. Usually because she springs it on me last minute and doesn't want to wait ages to be fed.

I would just serve something simple like the chicken with potatoes and veg with gravy.

Or make a cheese and bacon sauce and serve that with the chicken and veg.

Thanks for all the suggestions and the prompt responses. I have enough to give her a choice.

Why not cook pasta and say as you serve her "if you'd given me a bit more notice then I would have been able to plan something other than pasta again"

So, what did you have for dinner in the end?
