Urgent help needed, friend coming to dinner

Hello All, I post on this board quite a bit but have been put on the spot today. I have a friend coming to dinner today (unexpected). I can't get away from work early to go pick up anything from the supermarket due to the time she'll be arriving. I'd really appreciate some help with suggestions as to what I can make out of what I've got. I've scoured recipe after recipe and found nothing. Please help!!!!!!! I'd prefer not to make pasta as she says I always make that!
Here's what I have:
jar of pesto
bag of new potatoes
400g cooked chicken pieces
diced turkey
broccoli
baby carrots
peas
peppers
can of campbells condensed chicken soup
can of chopped tomatoes
tuna
1 square sausage
cheese
eggs (3 I think)
marg
skimmed milk
3 rashers bacon (frozen)
swedish meatballs (frozen)
tomato puree
various herbs and spices
Please help, I have until 3pm today to decide on what to cook.

The obvious dinner to me would be-
Chicken
New Pots
Brocolli
Carrots
Peas
Depending on herbs/spices season the chicken? or add gravy?

What about using the diced turkey and cook it in the chicken soup to make a sauce, You could then serve with the new potatoes and veg. You could alsodo this with the chicken if you prefer.
Also, check the tin of soup, they sometimes have recipes on them so you might get an idea thereYou're only young once, but you can be immature forever0 -
How about chicken casserole?...chicken, veg and chicken soup with whatever herbs/spices you fancy, cooked in oven or on top of stove, whichever suits you best, serve with salad (if you have some) and new potatoes.Weight 08 February 86kg0

How about coating the chicken peices in a large teaspoon of pesto & serving over roasted veg & spuds, maybe with some cripsy bacon on top?

Or use the soup with the chicken and bacon to make the base for a pie. Top with diced new potatoes, par boiled and tossed in a bit of the marg. Use as topping for the pie and bake until bubbly and the spuds are golden brown. Hopefully it's hot and sunny where you are today (it is here - yippee!), which might mean you don't want to heat the kitchen up by having the oven on.
How about a potato/chicken/pepper/peas salad, flavoured with pesto mixed with a little mayo or yogurt if you have it?0 -
Spanish Omlette:
Parboil your potatoes, drain, dice, and season with herbs (esp paprika).
Fry in a little olive oil with some strips of pepper and the bacon (defosted!) and maybe some peas as well.
Beat three eggs (four if you can buy another box) and pour into the heavy duty frying pan. Let it set on a low heat.
Grate the cheese and once the omlette is nearly set, sprinkle over the top. Grill the pan to make the cheese melt.
If you are popping to the supermarket, get some nice crusty bread, olive oil & balsamic vinegar to serve it with, maybe some salad also. If not, serve with broccoli and carrots!Errors of opinion may be tolerated where reason is left free to combat it. - Jefferson0
