provided that the OP can provide proof of postage showing that the goods were sent to the correct address (The one provided on the paypal invoice), then there is no reason why they won't win the dispute.

I agree that if a buyer opens a SNAD then it's almost guaranteed that they will win, but providing that the seller has followed the requirements for seller protection, a dispute for unauthorised payment is a different matter.
  • You dont get a proof of postage with myhermes like you do with royal mail.

Hence why I am stuck with what to do.

That doesn't matter. Proof of postage is only the minimum needed to fight a chargeback for unauthorised payment.
You said in your opening post that the online tracking shows delivery, and providing that it shows the address or postcode, this can also be used as proof.
  • If you type the tracking number in it doesnt show the postcode or address.

    It just shows as delivered.
  • Spam reported
  • As has been said, proof of posting is all that is needed to defend this chargeback. Hermes do give receipts, I get them daily.

If you don't have it, add the tracking, screenshots of delivery and order along with any correspondence you've had with the buyer.
