I've had one split when I dropped it when it was frozen, I haddn't realised, popped it back in the freezer then defrosted it later and woke up with a mess on the bench. Now I defrost in sink, on drainer or if I'll be out in fridge standing in a large dish.
When my Mam who worked on a deli counter got some HUGE blocks of cheese for 50p each we froze those, they kept us going for months. Grated some before freezing but the other was just a block and sliced ok when it was needed.
Never tried freezing cream but have some single UHT cream which will end up being ditched tomorrow if I don't so might try it.
When freezing anything freeze in usable portions, makes it so much easier when defrosting and saves waste. Trying to cut a chunk off a huge block of cheese is bloomin hard work!One day I might be more organised...........

I tend to put it in a bowl of cold water if I need it defrosted quicker, keep changing it until done, usually works for me.One day I might be more organised...........

I freeze butter, milk and cheese regularly. Sometimes I grate the cheese, sometimes not. It does crumble easily after thawing, but I've never found it much of a problem.
In France I buy small packs of UHT cream, they freeze well.0 -
We bought a load of low fat cathedral cheddar when it was on BOGOFF and one day before the offer ended it finally was in stock when we were in. We bought 8 lots because we felt rich and we always use cheese. Froze the lot of it and working our way through it!
I freeze milk in ice trays, bang it out then stick it in plastic sandwich bags. Then I just drop two cubes in a cup of tea, stir well (so the scum drops to the bottom) and drink. Perfectly fine in the morning with the coffee or tea and you only use what you need when you need it.

Oh why haven't I ever thought of the ice cube tray thing, for weeks when we're rarely at home this would be handy, also saves ever running out for my morning cuppa or the boys cereal. Thanks for that.
Off to the kitchen now seeing as I've got 10 pints of the stuff, now where did I put the ice cube trays.............................................................One day I might be more organised...........

You can definitely freeze butter. I do it all the time. I used to do it when I bought butter, and now I do it with my own hm butter.

I remember in the school hols if we were bored, mum used to give us a jam jar filled with whole milk and we would spend the whole day (on and off) shaking it to make butter. By tea time it would be done and we would proudly sit down when dad came home from work, with 2 pats of butter on the table that we had made.
How do you make yous if you don't mind me asking?
