Although legally they may not have a leg to stand on, I can fully understand why they feel aggrieved. I have been in a very similar situation - parents loaned me some money, I was paying it back at the agreed rate and then I came into an inheritance. I paid my parents back straightaway, even though they told me I didn't need to. I had other debts I could have used the money for at the time, but I wanted to repay my parents' kindness and generosity. I think they'd have been pretty annoyed if I had just spent the inheritance on other things without offering them at least some of it in payment for my debt, regardless of whether they actually needed the money back or not. I hated owing them money and was glad to be able to get rid of the debt much sooner than expected.0

She should have given her parents a couple of grand without them asking, then used the rest on what she wants. Hindsight is 20/20 though I guess.
Her parents seem kind enough, giving her 6k with no interest and expecting just £100 a month) when they could have easily given her £500 if she desperately needed a car, so they must have threatened solicitors after being affronted particularly, perhaps after her giving them an earful for suggesting she pay them something from the inheritance towards her debt with them.
No doubt it's the death of one of her parents parents that gave her this cash bonus as well....

Kudos for using the inheritance to pay off debts instead of spashing out on a new car... but your girlfriend did take the p**s a little. She should have paid off the remainder of the car loan balance then used the rest to pay off some her other debts.
Karma has a way of evening these things out. She may find that any further inheritance goes to the dogs trust or cats protection league :-)0
