Does anybody have a recipe for carrot and chocolate cake?
It needs to be yummy and I don't need to worry about calories, the guy I'm making it for is as thin as a rake.
This would get me loads of brownie points and I know how good you guys are.

Hiya,
I have a recipe for carrot cake...
Makes a 2-layer 20cm/8in cake
250ml/9 floz vegetable oil
4 room-temperature eggs
225g/8oz soft light brown sugar
140g/5oz carrots, peeled and finely grated
225g/8oz self- raising flour
1/2 tsp bicarbonate of soda
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
140g/5oz walnuts chopped (although, I forgot to put these in the first time I made this cake :rolleyes: and it turned out lovely.
For the icing:
45g/1 1/2 oz unsalted butter, softened
170g/6oz good quality, full-fat cream cheese
300g/10 1/2 oz icing sugar
1tsp vanilla essence
lemon juice to taste (I don't use this)
To decorate: Optional
8 walnut halves - this gives you huge slices, I usually use 10.
1. heat the oven to 180'C/350'f/ gas mark 4. Line 2 x 20cm/8in sandwich tins with baking parchment.
2. In a bowl, stir together the oi, eggs, sugar and carrots.
3. Sift the flour, bicarbonate of soda, cinnamon and ginger into a large bowl.
4. fold the two mixtures together then fold in the walnuts (if using, I don't).
5. Divide between the 2 tins and bake in the centre of the oven for 25 minutes or until the cakes spring back when pressed lightly in rhw centre.
6. Cool on a wire raack for 10 minutes in the tin, then turn out and cool completely.
7. To make the icing, beat the butter and cream cheese together until smooth. Sift the icing sugar over the top and stir in. Flavour with vanilla and lemon juice.
8. Use the icing for fill the cake and ice the top. Decorate with walnut halves, if desired.
p.s. what I thought was that you could substitute the walnuts for chocolate chips and maybe a different icing? Baking is fun, so have a play around0
