The problem I observed was that HMRC had an "average" industry figure, and if you worked in a particular role, regardless of where you worked or who for, & they adjusted your tax code accordingly, regardless of what you actually received, so there were some big winners and some big loosers, which often followed a gender bias.
I don't work as a waitress anymore so not 100% sure but I thought it was the same. Tax code adjusted and tax stopped, end of year you had to make a declaration as to how much you'd made and either the code was adjusted or you got a rebate.0 -

Had an email from Beefeater today, and part of their email "signature" has their stance on tips paid via card:Credit card tips will be processed by the payroll department and paid to your server after deduction of Income Tax and National Insurance contributions only. No other deductions will apply0
