Meal plans WC 25th Jan

Hi :hello:
This weeks meals but days may vary as I'm working different hours.

Tuna and sweetcorn pasta
Shepard's pie with leeks and cauliflower
Beef stir fry
Beef and onion casserole with dumplings
Pizza and garlic bread
Turkey and mushroom curry with turmeric rice
Mushroom risotto
Breakfasts will be porridge, toast or weetabix
Lunches will be quiche and soups
Snacks will be scones, biscuits, fruit and yoghurt

We have every thing in after a big shop today

    My week's plan is also flexible.

    S - Balmoral chicken, neeps, tatties & greens (Burns Supper Night)
    M - Omelet or frittata and salad
    T - Chickpea & veggie curry, rice and cucumber ratia
    W - Mushroom & pea risotto, salad on side
    Th - Minestrone (thick) soup, slice garlic bread
    F - Italian beef & veg casserole, tatties & greens
    S - Quasadillas with lo bean & chorizo chilli, hm coleslaw and salad
  • Our week is also quite flexible - mostly using up bits in the freezer as I'm not myself at the moment and don't fancy loads of cooking!

    Turkey curry
    Goulash
    Oven bits (fish for me, chicken for OH)
    Bolognese
    Date night

    M - barley risotto with courgette & butternut squash
    T - chicken curry & naan bread
    W - steak pie, jacket tatties & mixed veggies
    T - veggie curry & yellow rice
    F - whatever fish Mr Zaxdog hooks wrapped in sea lettuce and baked & mixed veg rice
    S - homemade turkey burgers, baked tatties & salad

    Monday- eating out
    Tuesday- pasta and sauce (husband working late)
    Thursday- Mince, potatoes and veg
    Friday- chicken and bacon stew
    Saturday- that green curry with rice

    Just did the weekly shop in Aldi, including some cleaning bits. And it came to £30.20 :)

    I love reading through these posts as it gives me so much inspiration. :)

    I am running the freezer down at the moment and so we will be having:

    M: Gammon & Mustard Mash & carrots
    T: Chicken Pie & Mushy Peas
    W: Omlettes with onions/peppers etc
    T: Veggie Pasta Bake
    F: Home-made fish cakes, potato wedges and mushy peas.

    Got all this stuff in, and so minimum spend :)

    We will be having:

    Sun - Roast chicken with veg and roast potatoes

    Then in no particular order:

    Chicken and mushroom spud pies
    Veggie Shepherd's pie
    Beef stew with beans and peppers
    Creamy mushroom spaghetti
    Corned beef hash
    Toad in the hole with wedges and probably peas

    I will also make Cauliflower cheese soup for lunches and Peanut butter granola bars for snacks/lunches.

    This week's meals are flexible as DH's working different shifts and I have a few things on. We're eating out of the freezer as well.

    M - Quesadillas (pulled pork and refried beans)
    T - Quesadillas / soup
    W - Roasted pork with beans and wedges
    T - Spaghetti bolognese
    F - Sweet and sour pork with noodles
    S - Pizza / soup
    S - Roasted chicken thighs with stuffing, gravy and any veg that I can find in the freezer / reduced shelf!

    Sure no problem

    2 oz butter
    2 fl oz honey
    1 lb 1 oz porridge oats
    6 oz nuts (I used almonds and pecans)
    3 1/2 oz seeds (I used pumpkin and sunflower seeds)
    1/2 tsp ground cinnamon
    5 1/2 oz raisins
    3 1/2 oz crunchy peanut butter
    4 1/2 fl oz golden syrup
    2 1/2 oz light brown sugar

    Mix together the nuts, seeds, cinnamon and raisins. Meanwhile melt the butter and honey together. Pour over the dry ingredients and bake until golden brown (don't allow to burn).

    Then melt the peanut butter, golden syrup and sugar together. Mix well with the granola. Press into a lined tray and cool until set. Cut into slices.

    Let me know how you get on with it.
