Italy Summer Wedding - How to pay for everything..?!

Hi All

Long time lurker, first time poster.

I'm getting married in Italy in the summer. The wedding planner, caterers and a few other people want paying in cash, what is the best way to do this to get the best rate, while avoiding fees or having cash lying around for months on end?

They want to be paid in cash, as they do not have to declare the money. Any payment now to a business registered in Italy, that is over Euro 1000.00, has to be paid that way, via a bank etc, with a PIVA invoice. It is meant to stop tax evasion, but obviously up to you to decide.
