Parking Eye PCN for Priory Centre Worksop advice wanted

Just received PCN for Xmas Eve shopping at M & S, parked in Priory Center in Worksop and there for just over an hour. I bought a ticket for time I stayed but couldn't remember exact registration number, but as there was a long queue I put what I could remember in. I assume thats why I've been sent PCN as doesn't match the photo they took of my cars registration.

Have read ML guide but not sure best way to deal with it as I don't have the ticket so would this invalidate any appeal as no evidence.
Cars registered in partners name so is it best to deny knowledge of driver. Also ticket issue date is 7th January so this is 14 days after supposed offence. As I've no proof that I paid would this weaken my appeal. I'm annoyed about getting this as I paid for the parking but don't want to end up owing twice the amount or have to deal with court papers. Would be grateful for any advice.

Forget the Martin Lewis Guide and DO NOT use the template appeal letter from that article! Forget all of that - it is badly written (the template 'appeal' is AWFUL). Read the NEWBIES thread near the top of this forum and use a shorter version of the first appeal I wrote there (use the FORUM JUMP on the right, and click GO, to get to the forum top). You will have to remove the ranting bits and the blurb ('drop hands offer' could go) from the Newbies thread version, to make it fit in the PE appeals box - also I suggest he/she adds 'the P&D fee was paid but the driver thinks they only entered the part of the VRN they could recall, so please check your records from the time just after arrival to locate the payment which the driver thinks was £xx. The driver was a customer of M&S and I attach as evidence a copy of their receipt as well'.

ONLY choose 'registered keeper' in the PE dropdown box and do this in your partner's name only. Not saying who the driver was - and attach a copy of the M&S receipt.
PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
