Meal Planners - Week 1 - 2 January 2015

Hi

Back to the meal planning. Just under 2 weeks until pay day and we have just put an offer in on a new house so, need to be strict on our food budget (which seems to easily spiral). I am going to make a pan of Mushroom Soup and Cauliflower Cheese Soup using the LO Stilton from the Christmas Cheese board.

Sun - HM Turkey & Ham Pie, Roasties & Green Beans
Mon - Tuna, Cheese & Pepper Quesadillas & Salad
Tues - Mushroom Soup & Crusty Roll
Weds - HM Wedges, Poached Eggs & Beans
Thurs - Ham & Mushroom Pasta Bake
Fri - Hairy Dieters Sweet & Sour Chicken with Rice
Sat - Fillet Steak & Chips (steak in freezer - Christmas purchase)
Sun - Roast Chicken & Trimmings

**Breakfasts will be cereal & chopped banana**
Lunches will be HM soup, Salads or Cottage Cheese & Crackers for me, Ham/Tuna Sandwiches or Tin of Tuna and Pouch of Rice for OH.
For Brunch on Saturday we will have bacon & egg baps

    My plan is not for specific days. We will have what I have the time and inclination to cook each day. There is also a mixture of meat and vegetarian dishes. All meals cooked from scratch.

    Peanut chicken stir fry
    Root vegetable crumble
    Sausages with cauliflower cheese
    Potato and ham bake
    Chickpea burgers
    Gnocchi and tomato bake

    Lunches are normally sandwiches and fruit. Breakfasts are cereal or porridge.

  • Sunday Roast Beef, roast spuds, Y puds, kale from garden, carrots from freezer and gravy followed by tiramisu left over from New year dated 9th January

    Monday Left over beef in a stir fry with black bean sauce, a jar of bamboo shoots in a jar (Aldi last year), mini sweetcorn, mushrooms and peppers all from freezer served with rice from cupboard.

    Tuesday Casserole from the freezer and dumplings with roast potatoes and kale from garden

    Wednesday Mediterranean Pork stew with mashed potatoes all from freezer and cupboard

    Thursday Salmon and spinach in pastry (puff pastry with a layer of salmon, a layer of spinach and a layer of cream cheese and chives plaited and cooked in the oven for 30 minutes or until golden and puffy) All from Christmas leftovers, the spinach is from the garden.

    Friday Cheese risotto using up some Christmas Cheese

    Saturday Broccoli, bacon and stilton soup with crusty HM bread.
    125g streaky smoky bacon, chopped into small cubes ( from freezer)
    40g butter
    1 red onion, finely chopped
    500g broccoli heads (I use Aldi frozen broccoli)
    600ml vegetable stock (home made is preferable but you can use vegetable stock cubes or boullion powder
    60g Stilton, crumbled into small pieces
    Using a non-stick pan, fry the bacon without any fat until it starts to crisp.
    Add the butter, melt, and then add the onion. Gently fry until it softens. Add the broccoli, and mix well to coat with the buttery mixture. Cook gently for about 2 minutes, and then add the stock. Bring to the boil, then cover and simmer for 30 minutes. Remove from the heat, and blend the mixture to a smooth pur!e.
    If you are eating the soup straight away, then return the mixture the pan. Gently heat, stirring continuously as you add the cheese pieces. Once heated through, serve.
    If you are preparing the soup to eat later, then you can add the cheese pieces to the mixture whilst it is still in the blender. The mixture should still be warm enough to melt the cheese, and you can blend further to ensure that it completely mixes.
    Serve the soup with a swirl of single cream and / or some crunchy bacon pieces.

    sunday: hot pork sandwiches, stuffing, apple sauce
    Monday: cold pork, cauli cheese, peas, roasties
    Tuesday: chicken satay, rice and salad
    Wednesday: fish pie - will not be popular with anyone else with peas and sweetcorn
    Thursday: roast dinner not sure what meat I will take out of freezer poss lamb shank, sprouts, carrots, mashed pots with turnip, peas, green beans
    Friday: skinless chicken thighs, chorizo, potatoes, onions and peppers in some kind of traybake

    Lunches, HM soup, jacket potatoes, pasta salad or sandwiches

    breakfast: toast, cereal, yoghurt, cereal bars

    snacks, christmas leftovers, fruit or yoghurt

    Sunday- Bombay potatoes with stir fried fridge bottom veg and left over beef coated in spices
    Monday- Smokey mince and chorizo in wraps
    Tuesday- Tilapia fillets roasted in foil with veg and noodles
    Wednesday- Carbonara using up the bacon from the turkey
    Thursday- Turkey curry with turmeric rice and hf prawn crackers
    Friday- Pizza and garlic bread night
    Saturday- Soup and rolls followed by mince pies with custard

    For lunches I'm making sausage and apple sauce rolls to finish off the jar. Stuffing and turkey rolls and soups.
    Breakfasts will be muesli, porridge or toast.
    Snacks will be from the mountain left over.

    I'm hoping to get through the week just buying the fresh stuff, most of the meals are from left overs.

    Sun Roast Lamb, potatoes, parsnips, swede, carrot, broccoli. followed by Apple and cranberry crumble
    Mon Egg fried rice with mixed veg and scraps of lamb, prawn crackers
    Tue Fish and oven chips, peas and carrots
    Wed Chicken Fajitas with wedges, guacamole
    Thu Lamb Hotpot with veg
    Fri Turkey Cobbler, mash and veg
    Sat Chinese takeaway
    Sun Pot Roast Beef, followed by Apple and mincemeat tart

    Lunches - I shall make some broccoli and Stilton soup and mushroom risotto for lunches for me and anyone else who may be at home.

    All from freezer and cupboard stocks as hoping to leave big food shop until 16th January at the earliest.

    Tortellini Primavera and garlic bread
    Roast chicken thighs, roasted peppers, onions and carrots with cous cous

    Spag Bol and garlic bread
    Chicken pie, dauphinoise potatoes and assorted veg.

    Feeding three adults so there will be LO's used for lunches along with soup. Breakfasts are cereal,porridge and toast.

    5th Monday - Lentil veggie dish (dal cookbook) with pitta bread
    6th Tuesday - HM beef and barley casserole with cabbage
    7th Wednesday - Chicken proscuitto(YS) with carrots and broccoli
    8th Thursday - Toad in the hole (using YS cocktail sausages) with veggies and mashed potatoes
    9th Friday - YS Fish fillets with mushy peas and HM oven chips
    10th Saturday - HM meatballs and pasta (to shift some of the stockpile)
    11th Sunday - Roast beef dinner with all the trimmings

    Apart from veggies all from freezer and stores

    My meal plan for the week -

    S - Quesadillas made with smoked cheese, mushrooms and leeks, served with rocket, refried beans and corn cobs
    M - Quesadillas again, made with cheese, refried beans and leftover lamb, served with corn and rocket
    T - Soup and part baked baguettes
    W - Spaghetti with spinach, ham and cream cheese
    T - LO pasta
    F - Baked potatoes with cauliflower cheese
    S - Out

    Breakfasts / lunches will be cereal bars, blueberry bagels with cream cheese, soup or tuna sandwiches. I'll shop on Tuesday but don't need much, will continue to use up freezer and cupboard stores. All I need for the above meals is a bag of pasta.
