Leaving the airport while in transit

In a KAYAK flight details section, from Bhx to Brisbane, there are a couple of 'change planes' in Dubai and Bangkok of 8hrs and 19hrs. All sections are Emirates.
What would that involve? Is luggage automatically routed through, or would it need collecting and re-checking? Would it be permitted to leave the airport to see the city? (I've not checked whether this is practical- but I'm interested in the answer anyway, because other routes/stopovers are possible)
I was wondering about extending the time, but when I try to split the journey up- by making it a multi-trip, the price is substantially more. I can appreciate there may be additional taxes etc. but was surprised at the extra (about +300 on a £1300 fare)

That would be because a stop of less than 24hrs doesn't actually count as a stopover. You'll probably find the cheaper fare you found doesn't allow stopovers.
Yes you can leave the airports - on the condition you have a visa or are visa-exempt for the specific country - you'll be fine in the UAE and Thailand.
The general rule is that your bag will be checked all the way through, but if you have an overnight connection you might have to retrieve your bag then recheck it in the morning.
You could see the main sites with an 8 hour connection in Dubai (though you'd be pushing it a bit) and 19 hours is certainly worthwhile. I'm pretty sure Emirates don't fly or codeshare between Bangkok and Brisbane though so I'm not sure why all the legs appear as Emirates?0 -

You're quite right! I've been through so may combinations of routes that I'm getting muddled. It's actually Christchurch that has the 3 leg Emirates flight (but I'm hoping to include the Great Barrier Reef during the trip)
