Switching bank accounts - a couple of questions

When switching accounts to take advantage of introductory deals, can you choose which DDs you want to move across? Can you keep the old account or does it have to be closed?
If you are a customer of a bank, e.g. you have a Santander basic current account and wish to take advantage of the 123 account, can you do it? I.e. will you get all the benefits of changing accounts like an introductory cash payment etc.?

1. Can't choose, has to be closed.
2. Do what? Firstly, bonuses are available for switching from other banks, not within the bank. Secondly, the only "introductory cash payment" for S123 I know is TCB £36.75 cashback.
Switch your basic account to some other bank offering £100-£150, then switch it back to S123 for the cashback and 'benefits'.0
