Can't remember the last time I wasted any "proper" ingredients. What could I do with potato peelings? They are the only bits that aren't used now. Oh, those and carrot tops.
Depending on what you're cooking I'd leave the potato skins on, but that's not always nice (especially if you have fussy eaters - my OH doesn't like them in the mash) You could bake them and serve with a dip. Potato skins are often seen on menus, but I think they come from baked potatoes hat the filling has been used for something else - like mash.
If I'm planning to peel carrots I still give them a good scrub, and put the peelings and ends in a bag in the freezer, along with onion skins, outer leek leaves, garlic ends and when I get a chicken carcass use them in the stock pot. Wouldn't do it with pots, etc as they don't add flavour and make the stock cloudy. Saves using a whole carrot/leek/onion in the stock
