Depending on what you're cooking I'd leave the potato skins on, but that's not always nice (especially if you have fussy eaters - my OH doesn't like them in the mash ) You could bake them and serve with a dip. Potato skins are often seen on menus, but I think they come from baked potatoes hat the filling has been used for something else - like mash.
If I'm planning to peel carrots I still give them a good scrub, and put the peelings and ends in a bag in the freezer, along with onion skins, outer leek leaves, garlic ends and when I get a chicken carcass use them in the stock pot. Wouldn't do it with pots, etc as they don't add flavour and make the stock cloudy. Saves using a whole carrot/leek/onion in the stock

Try offering them on freegle/freecycle, I got rid of hundreds of ours on there, including recordable ones.
