Worth looking at less well known cities too. Flights to Barcelona, Prague, Venice etc are very popular so prices stay higher
But look at places like Lisbon, krakow, Malaga etc and you might find it more reasonable.Lea

Can recommend Athens, Madrid and Italian cities eg Verona. Flights with Monarch/Easyjet/BA should be cheaper around that time of year - check for offers. An apartment may be cheaper but probably not for only a couple of nights. Metro in Madrid and Athens good value for getting to/from airport. As someone else suggests, look at some of the airline websites and see what offers they have for around your dates from Manchester and take it from there. Sometimes booking a package is cheaper too so compare the same destinations booked independently versus package.
I would also second eastern Europe as often your cash will go further.0
