I left red lentil soup cooking in the slow cooker last night, using some of the stock the gammon was cooked in. Once blitzed I'll add some finely chopped leftover ham. Mmm so tasty. I love finding different ways to use up the excess food so will follow this thread closely.
Yesterday's tea for us was the leftover Christmas Day starter Seafood platter made into a Seafood Risotto which was delicious.Mortgage, we're getting there with the end in sight £6587 07/23, otherwise free of the debt thanks to MSE help!0 -
I rarely have left overs, my family hoover up the food Christmas Day! If I do have enough turkey left, I use it in a salad with grapes, banana, pineapple, mayo, cream and curry paste on Boxing Day.
I gave up buying to excess a long time ago - couldnt afford it :A0 -
hoping not to have too many leftovers.
I made veg soup from the xmas day veges - two pots in the freezer for work lunches, making some mash at the moment for bubble and squeak patties - will fry off and then freeze.
We had turkey and gammon pasta tonight - leftovers froze for work lunch, and will have gammon egg and chips tomorrow, the rest of the leftovers, will be made into pie filling and frozen ready for later in the month.
Will have to think off how to use beef and lamb when roasted of for new years next week, and yet more veges!
May have to freeze some cheese as we only like it in ts normal state - not cheese sauce, clauli cheese, so think I will have to individually portion it and freeze in bags0 -
Just buy enough or a bit less for your needs in the first place then you wont be left with loads of leftovers . I can only eat something once then thats it with that meal for at least 6 months. I've never been able to stomach eating the same thing on the trot for days on end however its dressed up.0

26/12/14 Turkey and stuffing sandwiches with mayo, lettuce and cucumber (yum!)
26/12/14 Turkey soup (boiled the bones with onions, carrots, celery a bit of ginger and added meat and potatoes towards the end)
27/12/14 Turkey and stuffing sandwiches again!
27/12/14 Stir fried turkey with onions, chinese cabbage and celery. (ginger, garlic, soy and oyster sauce) Served with rice
28/12/14 Warm Turkey sandwich with braised red cabbage
28/12/14 Turkey pasta. Diced celery, onion, 2 cloves garlic squashed, tin of good quality chopped tomatoes, basil, oregano S&P. Serve with pasta, some extra virgin olive oil and cheese.

I'm a big fan of leftover stew- any leftover meat gets chucked into the pot along with veg and gravy. Serve with rolls or potatoes.0

Using our Xmas dinner leftovers, I made a chicken & leek soup (we don't have turkey) and a roast parsnip & roast sweet potato soup - all portioned up and straight into the freezer for January lunches.
Cheese & onion pasties made with leftover roasties (!! I know! How did this happen? I did make loads, though) and aldi puff pastry, we ate all those yesterday. Also made a version of greggs festive bake pasties with roast potatoes, carrots, broccoli, peas, chicken, bacon and stuffing balls and cranberry sauce, cooked and ate one and the rest are in the freezer assembled but not baked.
Made some mash yesterday and chucked in the braised cabbage, more broccoli, carrots and peas and will shape into potato cakes today. These are probably for the freezer, too.
We have lots of cheese but i am not calling it leftover yet, as with four of us at home for the next week most of eat will get eaten without needing to get creative.
I love this time of year for food, I keep a list on top of the microwave to remind me what needs using up as with the fridge fuller than normal, it's easy to miss things if you are not paying attention!Mortgage free as of 11/11/15 !

You will not go wrong with this dish, it is brilliant for left over turkey, chicken etc and really simple to make in one pot, really really simple to make, no phaffing about adding ladles of stock etc, bung the whole lot in and turns out like Delia made it, every time.

Mmm,yes, SOUP! just made 2 large pans of stock from the turkey carcass in the pressure cooker. Yesterday,to the first I added leftover chopped roast potatoes, carrots,parsnips, lots of sprouts(!) and savory mince from christmas eve. Boiled it all up and blended well. My son gobbled it up. I didn't mention the sprouts.0
