Couldn't someone get all the same stuff as on Roku by using a tablet with HDMI connection to a tv?
or does the Roku give more?

Roku has a specific range of content providers (channels). Some e.g. ITV player have far less catch up programs available than the web version of ITV player.
Meanwhile many content providers block the use of HDMI from a phone or tablet, in a bizarre attempt to 'protect' their content and push you towards some other catch-up package to access that content.0 -
And of course you can control the Roku (and all the other little boxes and sticks) remotely, without cables...0

Yes I have a Roku 3 and like the kickback mode of just using the supplied Roku remote control. Squinting at tablets and phones all day can get a bit much.0
