whilst not answering your question i renewed my car insurance via quidco/lloyds TSB ( 90.00 cashback) and that was a churchill policy, price before cashback was same as on churchill site so u may have saved more by using the quidco/lloyds TSB offer rather than the quidco/churchill offer.

A similar thing happened to me when I got my insurance with More Th4n, it tracked at £35 instead of £75, but after a couple of weeks it changed to £75.
Yours will probably change to once everything has been confirmed & validated, if not raise a ticket with Quidco and it should get sorted.

I'm sure this will have been asked before, but please forgive me for not trawling through 100 pages to check.

If I take out a car insurance policy in my OHs name, with me as a named driver (RAC seem to be cheaper atm) will I have any problems getting it to track as the Quidco account is in my name?

The policy holder will have to be in the name of the person on the Quidco account
