The Doves Farm GF flours have recipes on the back of the bags - I can recommend the chocolate brownies. They also work if you use white chocolate. Icing or melted chocolate on top makes them nicer.
You can use the basic brownie recipe and add ground ginger and a dollop of golden syrup to make a very edible ginger cake.One life - your life - live it!0 -
I always make my own mince pies, as we have 2 coeliacs in the family. It's relatively easy to make GF pastry, just use GF flour or prescription mix in place or normal flour.
However it is a nightmare to use, so I must admit to cheating and being non-MSE and buying frozen GF pastry from Mr Ablood pressure issues avoided!

All the supermarkets have gluten free xmas puddings and mince pies - will either be in gluten free section or xmas section.
I went to Tesco today and they had gluten free Yule Log but it was £4.75!!
They have 3 for 2 on all gluten free products until 23/11.0 -
Well I have had a small success. Nargleblast gave me the idea because I love ginger cake.
I used 4 oz. butter
4 oz. GF flour SR
1 oz sugar
2 heaped teaspoons of GF baking powder
2 table spoons of golden syrup
1 teaspoon ground ginger
2 eggs
milk
It was more like a batter than a cake mix and smelt lovely when it was cooking. It still sunk a little in the middle but the cake is very light.
I had to try a small slice off the end (I did it in a loaf tin) for quality control reasons, you understandand it isn't bad, if I do say so myself.
I think a bit more practice and I might have a cake that is fairly presentable.
