LED downlights

Hoping some people can give me some advice here...
We are starting a renovation of our kitchen & dining room, knocking them together to make a big kitchen/family/dining room.
When it comes to the lighting, I would like to have 2 'zones' - one being the kitchen and the other the dining/living area. There will be a beam on the ceiling between these areas so it's a natural break anyway. I would like downlights (spots) throughout, with at least the dining/living area to be dimmable. The kitchen will have probably 5 spots and 2 pendants over the breakfast bar, as well as some undercupboard lighting.
I just need some advice on where to get the lights. I've looked at energysavingLED/well-lit as recommended elsewhere on the forum and they look good but they don't seem to sell the actual light fitting, just the bulb. How do I know what to look out for? Are 'fire rated' fittings essential/recommended? If so, why aren't they all fire rated? What price should I be looking at?
I would like to have a bit of knowledge on this before the electricians come to quote as I would like to source as much as possible myself to keep costs down.

I've used ecoled zep1 fittings in ours. They come as a complete unit, custom design for LED. So big heat sink and bigger reflector to suit LEDA much better.
