Holiday Suggestions for Feb Half Term 2015

To cut a long storty short, Mrs Crisp and I were planning to go to Cuba in Feb for 7-nights, all inclusive at £700 each. We have now had to abandon this plan.
Unfortunately, Mrs Crisp is a teacher and her employer has last week stipulated that holidays must fall inside 15th Feb to 22nd Feb.
All we can find are holidays to the Caribbean for around £1000 plus at this time, even to Cuba, Dom Rep and Mexico
We are now willing to look further afield although the Caribbean is our first choice.
Any suggestions of where we can get 7-nights all inclusive and flights for under £800 each and temps over 25c?
