I make a simple carrot salad which goes well in sandwiches, especially with a mature cheddar:
Grate a large carrot, then dry-fry half a teaspoon of caraway seeds, half a teaspoon of cumin seeds and a tablespoon of sunflower seeds in a heavy-bottomed pan, just for a couple of minutes, until the seeds start to brown. Then mix the seeds through the grated carrot.

How about making up some soup and putting it in a flask?

Take a block of feta (lidl and aldi do nice ones) and get a jar of pickled peppers (I think a pound or so, but only in lidl). Stick the whole block of feta in the food processor with a drizzle of olive oil then add one of the peppers and blitz it. Add a clove of garlic if you like. Makes a really good dip, or delicious sandwich filling.

Dairy free cheeses (you can make vegan cheeses including nut cheeses yourself - look online)
Tofu (you can buy smoked/marinated and have with salad and houmous)
Nut/lentil roast can be used in sandwiches - just slice it and have with veg/salad, maybe some sage and onion stuffing and maybe ketchup or houmous to give it a little moisture.
Left over veggie fajita mix or simular - you can have in sandwiches or do as a wrap cold.2 adults groceries: June £35.79/£200

Yes, it is still available. I bought some two weeks ago at Holland & Barrett. Original version and some others on the shelf, such as mushroom. I love it!0 -

Got this from a French lady at her fruit and veg stall many years ago - finely chopped red onion mixed with avocado (part mashed, part chunks) and seasoned with a little salt and pepper is delicious.
