Savoury vegetarian sandwich fillings.

I am trying to eat less meat and am totally stuck when it comes to sandwiches.
Apart from plain salad, falafel or roasted veggies and hummus, I cant think of any vegetarian savoury sandwich fillings, could you please share any ideas you have?

Curried coleslaw and sliced peppers is one I've had in the past. I buy small/cheap pots of coleslaw and lob in a couple of spoons of curry powder and mix it through.
I've also seen, in sandwich shops, a firm omelette/frittata (which can be any flavour) as a baguette filling.0 -
Thanks PN. I am not keen on coleslaw though, too creamy for me. Sliced peppers sound god though, with something else.0

Off the top of my head . . . (Can you tell I like cheese
)
Cheese
Cheese and pickle
Cheese, mayo and spring onion
Brie and grape or cranberry sauce
Goats cheese and caramelised onion
Some 'fake' ham/meat with salad - I haven't been veggie for years but I'm sure there's a big selection now, my S-I-L has a Tofurkey joint for Christmas day!
Mozarrella, tomato and avocado or basil
Egg type ones (yuk!)
And there are so many different veg combos - raw, roasted, grilled etc. I used to like hummous with griddled courgette and pepper strips - mmmmmm!0 -

No-one has mentioned peanut butter or marmite yet, plus or minus salad or veggies.
Tartex (veggie pate) used to be a favourite of mine but has been ages since I've tried to find it so not sure if it's still available.

How veggie are we talking? Are eggs and dairy okay? What about fish?
Defo with the suggestion of omelette sandwich - my favourite thing in Barcelona used to be a entrepa de truita de patates (potato omelette in a baguette). Carb fest but flippin' lovely - it'd be great on one mf those value part bake baguettes or a YS crusty roll/baguette. Keeps you pretty full too.
Have you thought about halloumi? If you have a microwave available, a halloumi pitta with any kind of antipasti from a jar would be nice. Also with pittas, you can do pizza style open sarnies.
Pesto is another good way of making cheese or roasted veg a little different.
If you have soy sauce and other such lovely ingredients, what about marinated tofu with crunchy pickled vegetables for a kind on bahn mi?
If you are including fish (some do), what about cream cheese with salmon trimmings? Perhaps roasted vegetables with anchovies, smoked mackerel and beetroot (strange but I love it) or the good old tuna and sweetcorn."We always find something, hey Didi, to give us the impression we exist?" Grated carrot, shredded lettuce, sliced radish, thinly sliced cucumber, chopped spring onion, touch of mayo. Eat fairly soon after making so the sandwich doesn't go soggy. It's best to drain the sliced cucumber and the grated carrot on some paper towel before making the sandwich.
Strangely, I also like a beetroot and onion sandwich.Felines are my favourite

Are you looking for non-dairy options? These are some of my favourties:
- sliced avocado & tomato (drizzled with olive oil)
- walnut & sundried tomato pate (toasted walnuts whizzed up with some sundried tomatoes)
- baba ganoush (smoky aubergine dip - there is a good recipe on the BBC website, sorry the site won't let me post the link as I am a newbie!)
- tofu or Quorn marinaded overnight in something tasty (marinades could be anything you fancy, eg curry paste, yoghurt & mint, soy sauce & ginger)
- veggie burgers with tomato relish
- veggie sausage with onion marmalade - I like the Linda McCartney ones best, often half-price at our Coop for not more than a pound.
If you like cheese - there are lots more good options:
- feta, olive, tomato
- mozzarella, tomato & basil
- halloumi & baba ganoush
- goat cheese & roasted pepper
- cheddar & apple
etc etc
I make a simple carrot salad which goes well in sandwiches, especially with a mature cheddar:
Grate a large carrot, then dry-fry half a teaspoon of caraway seeds, half a teaspoon of cumin seeds and a tablespoon of sunflower seeds in a heavy-bottomed pan, just for a couple of minutes, until the seeds start to brown. Then mix the seeds through the grated carrot.

Veggie as in no meat or fish. Dairy free ideas would be excellent too, although I think that'll make it expensive to buy dairy free ingredients from places like Holland & Barratt (the only thing I can think of for dairy free would be roasted veg and hummus/pesto).
I don't have a microwave either, just to be even more difficult!0
