Ok, sorry, I get carried away with this sort of thing!

Real Mexican fajitas are made with stir fried onions, peppers and chicken, all in fine strips. The beef variety is called alambre, and its done with chopped steak, not mince, and with mature cheese (alambre con queso) its gorgeous (real thing would be manchego, not to be confused with the Spanish type, very different).

As for beans, there's no such thing as red kidney beans in Mexican cooking. Varieties available in Britain would be pinto and black beans. Borlotti make a good substitute too.

For refried beans all you need to do is fry some garlic, chopped onion, the drained beans of your choice, and mash. If they're too dry, add some milk, and enjoy! :beer:

(and for less impact to the environment, you can add a herb called epazote :rotfl: )
