can I do anything with overcooked gammon?

I am still getting used to my slow cooker and have managed to overcook a small gammon joint. Its too dry to serve as planned with pots and veggies. I am cooking something else now as kids need dinner!
However can I do anything with it for tomorrow's dinner? Put in sauce in a pie?? Or will it just taste horrible? Any suggestions gratefully received even if it's just to put it down to experience and bin it!

Hi, I cooked a gammon joint on the weekend and used some of the leftovers in spaghetti carbonara if that helps. I warmed the gammon up (shredding it first) in a dish with a some of the cooking liquid or you could just use water in the microwave. Then I added it the pasta etc.0

I think what I would do would be cook it again! sounds daft, but if you use a good barbecue sauce (your own recipe or a tinned one) then re-cooking in the sauce should tenderise it and you can then call it 'pulled gammon'.0

thanks for all the suggestions - I have a fair bit to use up so will probably try a couple. Shredded small (it looks like "pulled" gammon) and covered well in a sauce, omelette or similar I think. Just wanted opinions on whether it was worth using as I don't want to ruin a 2nd dinner!

I would chop it all up small, add some to honey and mustard sauce and use as a topping for baked spuds (basic white sauce, add a teaspoon of English mustard and a teaspoon of honey).
Saute more in honey and butter to caramelize it and add to cabbage and cheddar soup or ham and pea soup.
Use some for a big chicken and bacon pie and the remainder as pulled gammon in bbq sauce in rolls.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.

If in doubt shred it, add a spoon full of mustard and a good dollop of mayo and use as a sandwich filler - I mince mine down but a blitz in a food processor would work.....just like a meat paste"Start every day off with a smile and get it over with" - W. C. Field.0

What about slicing it then reheating with pineapple out the tin? The juices might soak in?0
