EXCEL PARKING FINE- what to do.

I have read sooo many threads on here and I'm still unsure as what to do.
Yesterday I returned to my car to find a parking ticket had being slapped onto my window. It was in an Excel parking lot in Middlesbrough. Its free to park there if you're using the leisure park. I was filmed leaving the car park and they slapped me with this £60 fine (£100 if not paid in 14 days) I did leave this car park but only to go to a cash point, I came back and used the facilities on the park and was back well in the time allowed (4 hours)
I don't know what to do, a lot of people have said ignore any letters as they can't do a lot. I've appealed tickets before and they've come back and said pay a reduced amount but I'm sick to death of these companies demanding ridiculous amounts!! Wish I'd kept my receipt from Nandos as proof I was actually there.
Any ideas would be greatly appreciated:)
