Yep, in fact used it for the first time due to inspiration from this board in my batch of broccoli and stilton soup at the weekend. I just cooked it a little longer than the florets.0

I'm all for putting anything into soup, whatever is left at the bottom of the fridge, even fruit and salady things. Also if a bit short on fresh use frozen, or tinned. If soup needs thickening I put porridge oats into it.

Thanks for bringing this up again. I've got lazy lately but I'm having broccoli tonight so I'll definitely slice up the stalks and freeze them for soups and casseroles.0 -
I've only ever used the stalks in soup and that is the same for many restaurant kitchens.0

I once fancied making broccoli and stilton soup, but I only had cauliflower and brie in the fridge. It was delicious.
Totally agree - everything goes in to soup. In fact I have a pot of stock on the go at the moment, using up the Sunday roast chicken carcase. Will use it tomorrow either for soup or as the basis for a risotto.
I would just add - if you're going to use/store the outer leaves of cabbage etc, or carrot peelings, make sure you wash them well beforehand.No longer a spouse, or trailing, but MSE won't allow me to change my username...0 -
I've discovered broccoli stalks, I slice them thinly and cook them with the florets as a vegetable. Delicious!keep smiling,

I salvage as much as possible and treat them the same as the florets: they are cooked and eaten together. They are also delicious cooked and dipped in plain white yoghurt.Who having known the diamond will concern himself with glass?
