Brocoli Stalk in Soup?

Hi me again! I am wondering if the broccoli stalk can be used in soup? Would rather use it than throw it away but just wanted to be sure x

Hi Lucy,
I save my broccoli stalks in the freezer for putting in soup. Also the green ends off spring onions and carrot peel for making stock. I just have a freezer bag which I put bits in as and when.

Thanks for that. I have just chopped it up ready. I am going to put some of the fluffy broc head into the soup and a chopped onion, veg stock cube and a pit of black pepper. Does that sound about right?Lucylema x :j0

Yup, go for it, have done it many times.
Have ended up with a soup that was mostly broccoli stalk and if you have too much of it and not enough other veg (spud balances it nicely) you can get a bit of a gelatinous texture, but it has to be about 90% stalk to get there.
Once you have discovered the wonders of the broccoli stalk, you will hardly ever waste it again. And don't forget the spines of the big coarse leaves on the outside of cabbages, either.Every increased possession loads us with a new weariness.

Cream cheese, cheese triangles, or any cheese taste nice with broccoli. Also, Stilton doesn't taste like Stilton on the soup so if you see it vastly reduced, like 10p, yeti tansies in soup or sauce. A little goes a long way.

The stalks are my favourite bit, so never make it to soup usually.
Me too for the spines of cabbage leaves....and cauliflower leaves..i love those.Yep...still at it, working out how to retire early.:D....... Going to have to rethink that scenario as have been screwed over by the company. A work in progress.0 -
