  • I like them grated into mince dishes like bolognese or a cottage pie. Also courgette frittas are great too with some feta chucked into the mix. Wish I'd picked some up when I was in the supermarket now!

  • Sliced and then under the grill with a little oil brushed on. Layered with a tomato sauce. Cheese and breadcrumb topping. Yummy. Full meal or as a vegetable side.
    Also noticed on 'mortgage free in three' a lovely slow cooker chutney. Looks really simple.

    Courgette Chips

    Dip courgette sticks (cut into batons) in egg, and then in breadcrumbs laced with rosemary, season with salt and pepper and fry until golden brown (or grill/bake on an oiled baking tray)

    Dip in mayo (with a squeeze of lemon juice, if you have any)

    Courgette fritters. Recipe on BBC Good Food - 1 grated courgette, 2 eggs, 50g flour, 50 ml egg. Makes a batter which you fry into little fritters. Yummy.

    You could add herbs/chilli to spice it up a bit.

    If you're really concerned about not using them, grate the rest and freeze, then you can use it to bulk up mince in future!

  • AGirlCalledJack blog has a great recipe for courgette and lemon bread. I've making a couple of loaves at a time and eating one, freezing one. It's kind of a something out of nothing recipe.
  • I always make courgette soup- chop an onion, couple of spuds and dice 2-3 courgettes and fry off in a little butter, add 500ml of stock and boil. Blend to finish, makes a lovely soup with a delicate flavour and always goes down well here! Freezeable too :)
